Cafe, Movie, Mercy...not in that order

First, God is merciful. We have now received  $30,686 toward the matching funds! Thank you, thank you, thank you! We are almost there. Only $19,314 to go. 13 days left to have your donation matched. Keep spreading the word.

Second, Film Camp 2010.  It brings me great Joy to see how the students persevered to get their film done.  BUT YOUTUBE just canceled our 6hr download.  So we will try again over the weekend.  My apologies.

Third, Cafe Cubano Style:  Was it G.K. Chesterton that said, "anything that is worth doing is worth doing poorly." Well to satisfy Chesterton, here is the basic overview of making cafe cubano.  To satisfy what St. Francis of Assisi said,"Let us be Extravagant for the Lord." we will start to unpack they mystery of good cafe in later posts.

Start with the end in mind.  Now repeat after me.  "I'm smart enough, I'm good enough, and I can make great cafe." Repeat x 3

First fill the basin with water up to the pressure valve.

Yep, amazing you can see it from the outside too.

Then insert the metal coffee filter.  Please don't even think of trying to cut a paper filter to fit.  Bad Idea.

Now fill it up with espresso ground coffee.

Lightly (very lightly) pack the grounds.  There will be future post on this step.  "Ya Can't Rush ART!"

Now screw on the top. Tight.

Oh, yeah turn on the heat.  This will need future posts too.


If you're going to make the ultimate spumita (the summit of great cafe) keep the top open to watch for the first bit of coffee to bubble out.  This might take some time so go get a cup of coffee and be patient.  From this point on you've gotta be on your game.  You're gonna need more focus that Huston during a NASA launch.

Books have been written debates have turned into fist fights over how to make the best spumita.  This is what separates the men from the boys.  My head swims when i think of trying to explain this in one post.  It can't be done!  
For now attempt the following.  Assuming you got the 4 servings size espresso maker, when the first teaspoon of cafe comes out mix it with 6 teaspoons of sugar in at least a  2 cup measuring cup.  And mix it and beat it and whip it like your swimming from a shark!  Yeah that's big time, but its one of the secrets.  Then once the rest of the cafe is brewed pour it in with the sugar, stir and serve.  ENJOY.  I can see it already we are going to have to do videos to help explain this...
